Here's how to make my Aunty's recipe for Black Country Faggots


12 ounces of liver
6 ounces of heart
Caul (the membrane covering cows' intestines)
2 small onions
Half a packet of stuffing
Optional: 6 ounces of pork belly

  1. Mince or finely chop the liver and heart.
  2. Finely chop the onions and boil them until soft. Then, drain them and mix them with the chopped liver and heart until well combined.
    Mix in the stuffing until evenly distributed.
  3. Cut the caul into squares. Spoon a portion of the faggot mixture onto each square of caul, then wrap the caul around the mixture.
    Place the wrapped faggots into a meat tray.
  4. If using pork belly, chop it into small pieces and mix it into the faggot mixture.
  5. Pour gravy over the faggots in the tray, then cover with foil.
  6. Bake in the oven for 45 minutes. Afterward, remove the foil and bake for an additional 15 minutes, allowing the faggots to brown.

Once done, your Black Country Faggots are ready to serve!
